Ingredients

• 1 tablespoon activated kefir grains
• 300ml plant-based milk (oat milk works well)
• 1 glass jar
• 1 muslin cloth
• Elastic band

Method

Place the activated kefir grains into a clean glass jar.

Pour in the plant-based milk and stir gently.

Cover the jar with the muslin cloth and secure it with an elastic band.

Leave the mixture to ferment for up to 24 hours on a kitchen worktop away from direct sunlight.

Once fermented, strain the liquid into a second clean jar.

Leave the kefir grains in the original jar and cover them with a small amount of the fermented liquid.

The grains can then be frozen and reused for future batches. Simply defrost them the evening before you plan to make more kefir.

Store the finished kefir in a sealed container in the refrigerator.

It will typically remain fresh for five to seven days, although regular checks are recommended.

The finished product should have a slightly sour taste, similar to natural fermented milk.
